ORIGIN: Rum from the Mascarene Archipelago. Made from pure fresh sugar cane juice. Labourdonnais distillery, Mauritius - Indian Ocean.
TRACEABILITY: This cuvée comes from lot 63/23 selected by Chantal Comte in the Chais Saint Eloi 88.
It was taken from this 5700 bottles silkscreened for Chantal Comte.
Bottling in October 2023 (Lot R231001).
HISTORY: This rum is part of the range of exceptional white rums from the Chantal Comte Collection. After «Fighting Spirit Red Line», «Fighting Spirit Blue», «Fighting Spirit Gold», this «Fighting Spirit Green Lagoon» embodies the freshness of the Indian Ocean and the floral sweetness of this exceptional rum that deserved a precious bottle, resolutely contemporary. “Fighting Spirit” is a manly term for Irish rugby that speaks of the desire to win, to surpass oneself. No violence!
EYE: It is a luminous transparency with the richness of glycerol tears that line the glass. Very beautiful presentation.
NOSE: It is powerful as a wave of surfing but harmonious: marine freshness and vegetal sweetness. A nose of pure rum juice, very pleasant, sharp and powerful.
MOUTH: We expect the strength of alcohol and we have the pleasure of brown sugar, notes of jasmine and honey. Tonic and fresh finish. Very nice balance, nice persistence.
PROOF: 55 % alc./vol.
SERVICE TIP: Traditionally, it is served pure at room temperature, like a grappa. Personally, I recommend serving it iced to avoid any dilution by ice cubes, syrup or lemon, because its exceptional qualities dispense any artifice.
GOES WELL WITH: It will accompany masterfully seafood, poutargue, caviar and all smoked fish but also some very fatty cheeses, refined chocolate desserts, fruit sorbets, a smooth Paris-Brest.
